La cucina d’autore di ALMA incontra naturalmente la ricchezza e i sentori della buona birra italiana, che a sua volta nasce da una tradizione profonda come quella del Birrificio Angelo Poretti, fondato nel 1876 a Induno Olona da Angelo Poretti che, il 26 dicembre 1877, produce la prima ‘cotta’ di birra. Divenuta nell’arco di un secolo uno dei capisaldi della produzione di birra in Italia, l’azienda viene gradualmente rilevata da Carlsberg Italia (allora United Breweries A/S) diventando nel 2002 interamente di proprietà danese. Il risultato di questa bellissima avventura è la perfetta combinazione tra tradizione e innovazione, attraverso la quale Carlsberg Italia ha recuperato l’antico sapere birrario del territorio della Valganna.

Il ricettario, realizzato in collaborazione con ALMA, la Scuola Internazionale di Cucina Italiana, testimonia come la birra abbia ormai un ruolo sempre più interessante in abbinamento ai grandi prodotti della tradizione italiana e ai più raffinati piatti d’autore, nella condivisione di quei valori che da sempre distinguono Birrificio Angelo Poretti e ALMA: tradizione, saper fare, innovazione e sostenibilità.

The Italian gastronomic tradition has a dynamic patrimony and beer has gained full rights at our table and has become a genuine and surprising accompaniment to excellent Made in Italy produce. ALMA’s high quality cooking naturally marries the richness and sensations of good Italian beer, which in turn is born out of such a deep tradition as Birrificio Angelo Poretti, founded in 1876 by Angelo Poretti in Induno Olona. Poretti produced his first brew on December 26th 1877. In the course of a century it became one of the cornerstones of beer production in Italy, gradually taken over by Carlsberg Italia (then United Breweries A/S) becoming entirely Danish-owned in 2002. The result of this wonderful adventure is the perfect combination of tradition and innovation, through which Carlsberg Italia has recaptured the ancient master brewery of the Valganna area.

The resultant recipe book, realised in collaboration with ALMA, the International School of Italian Cuisine, bears witness to how beer has gained an increasingly interesting role when combined with great products from Italian tradition and with the finest high quality cuisine, sharing those values that have always distinguished Birrificio Angelo Poretti and ALMA: tradition, know-how, innovation and sustainability.
